BOTANICAL NOTES
The origin of the sweet potato dates back to between 6000 and 8000 years before our era in Peru, then would have mutated around 4500 years in Venezuela, in the Andes and the West Indies around 2500 years. It was repatriated by the great Spanish and Portuguese sailors of the 15th century to Europe, Asia, China, Japan and the Philippines. The word ‘potato’ would come from the Spanish word ‘batata’ in 1599.
AROMATIC NOTES
Flesh with a slightly sweet taste and a subtle hazelnut flavour.
PROPERTIES
Sweet potato is rich in vitamin A (Beta carotene), C, B2 and B6, copper and manganese.
Its properties are : antioxidant, anti-inflammatory, anti-aging, but also has a beneficial effect on hypertension, diabetes, the prevention of certain cancers.
It is suitable for athletes because of its high carbohydrate and fibre content. Gluten-free.
USES
Available in powder form, it is recommended as a substitute for wheat flour for cakes. Prepared as a puree with meat, stews, sauces.
